Slice tubes into 3/4" or 2cm rings. Slice larger tentacles in half if needed. Pour buttermilk brine over squid pieces and toss to combine. Cover and allow to marinate in the fridge for 30min-2 hours. To make the breading, add flour, cornstarch, baking powder, and black pepper to a med-lrg bowl. Whisk to combine. Use spider (or slotted spoon) to transfer the calamari pieces into the breading, making sure to drain off as much buttermilk as possible. Coat pieces with breading mix. Transfer pieces of calamari onto a sheet tray, shaking off excess breading as you go. To fry, add 2qts oil to a large, heavy bottomed pot. Preheat over medium heat or until oil reaches 365F/185C. Carefully add in 1/2 of the calamari. Use spider to move around calamari pieces, making sure they cook evenly and no pieces are stuck together. Fry for about 3min or until pieces are lightly golden brown. Scoop out of oil with spider and transfer to a towel lined tray. Sprinkle with salt. Fry second batch of calamari. MARINARA / "RED SAUCE" ▪800g or 1 28oz can crushed tomatoes ▪1/2g or 1tsp dried basil ▪1/2g or 1tsp dried oregano ▪1/2g or 1/2tsp dried chili flake ▪10g or 2 1/3tsp sugar ▪7g or 1 1/4tsp salt ▪50g or 3Tbsp tomato paste ▪25g or 2Tbsp (double glug) olive oil ▪15g or 2 cloves minced garlic Combine tomatoes, herbs, chili flake, salt, sugar and tomato paste in a high sided container and blend with immersion blender until smooth. Preheat saute pan over medium then add olive oil and garlic, stirring immediately to begin to cook (about 30sec). When aromatic, add tomato mixture. Stir then reduce heat to low. Simmer for 20-25min until thickened. SUBSCRIBE and activate the notification 🔔 to see all of our weekly recipes! 😀 ~ RECIPE ~ Yield: 2 Serves Preparation Time: 20 Minutes Cooking Time: 10 - 12 Minutes INGREDIENTS - Calamari / Squid (2 Tubes) 450g - Salt 1tsp - Ground Pepper 1tsp - Egg (Beaten) 1 - Tapioca Starch 150g (Substitute by Corn Starch or Potato Starch) - Vegetable oil for deep frying (Can also be done in an Air Fryer) METHOD (1) Rinse the Calami Tubes well under cold water then pat dry before transferring onto the chopping board. Cut open the Calamari Tubes then using a knife, remove all the extra skin on the surface (Makes the Calamari rubbery when cooked) then pat dry using kitchen towel. (2) Cut the Calamari Tubes in half then using a sharp knife, score the calami as shown in the video. Portion into 5 equal pieces or desired shape. (3) Season the calamari pieces with Salt and Pepper, then add 1 beaten Egg and mix well. (4) Gently coate the Calamaries with Tapioca Starch, shaking off any extra Starch. (5) Deep fry or fry using an Air Fryer at 190C | 380F for 10 - 12 Minutes or until golden and crispy. The squid is very tender but a little bit bouncy. The sauce is so flavorful and little bit sweet. We usually serve it with white rice. Ingredients for the sauce - 1 tsp of cornstarch [生粉] - 1 tbsp of Chinese cooking wine [料酒] [Amazon Link: 🤍 - 1 tbsp of soy sauce [生抽] [Amazon Link: 🤍 - 2 tbsp of oyster sauce [蚝油] [Amazon Link: 🤍 - 1 tbsp of water [水] - 1 tsp of sugar [白糖] - 1 tsp of black pepper [黑胡椒] - 1 tsp of dark soy sauce for the color [老抽] [Amazon Link: 🤍 Ingredients for stir fry - 12 ounces of squid [鱿鱼] - Few slices of ginger for blanching the squid [姜片] - 2 tbsp of oil to stir-fry [油] - Some ginger strips [姜丝] - 3 cloves of minced garlic [蒜末] - Some white part of spring onion [葱白] - 1/2 of red bell pepper [红彩椒] - 1/2 of green bell pepper [青圆椒] Instruction: - Clean the squid and remove the skin. - After that, use your knife to create some patterns on the squid so it will look better and be more tender. Make sure the inside part is facing up. Run your knife gentle and evenly but don’t cut off. Switch an angle, do the same thing again. Then cut the squid into small pieces. - Also, cut the wings the same way and cut the tentacles into small pieces. - Next, we will quickly blanch the squid. Prepare a pot of water. Add few slices of ginger. Bring the water to a boil. My rule for cooking squid is – eight it is less than 2 minutes or more than 2 hours. Anytime between that, it is going to be tough. So we will just put this in for only 10 seconds. This is just to remove the bad smell. Then quickly take it out. Rinse the squid under cold water and drain it completely. - Now let’s make the sauce (1 tsp of cornstarch, 1 tbsp of Chinese cooking wine, 1 tbsp of soy sauce, 2 tbsp of oyster sauce, 1 tbsp of water, 1 tsp of sugar, 1 tsp of black pepper, 1 tsp of dark soy sauce) - Mix that up and the sauce is done. Let’s start cooking. - Turn the heat to high, add 2 tbsp of oil. Wait for the wok to get hot. Add some ginger strips, garlic, white part of spring onion. Stir this until fragrant. - Add the bell pepper. Stir them for about 3 minutes or whenever you think the pepper is ready. - Add in the squid. Remember I said, we need to cook the squid less than 2 minutes. We already blanch the squid for 10 seconds, now you only got 1 minute and 50 seconds left. Make sure you use the highest heat possible. This is the key to Chinese stir-fry dish. Everything needs to cook really fast in the wok. If you use low heat, it will take longer to cook and the food will starts producing water which you don’t want that. - Add the sauce 20 seconds before you turn off the heat. Toss everything together. Count the time correctly and you can take it out. Serve it with white rice. Enjoy your meal! To this mixture, add salt, turmeric powder, chili powder, cumin powder, coriander powder, pepper and mix well. Cook for a few seconds. 8. Add water and mix again. Add the marinated squid pieces and mix well. 9. After a min, add garam masala, mix and cook for 10 mins. 10. Add curry leaves, chopped coriander leaves and lemon juice. 11. Grilled Kalamari | Grilled squid Calamari is very common in restaurants, but it is often prepared with a fryer so it is breaded and crispy. In Greece Kalamari is typically grilled. It still tastes incredible, and it makes the whole dish lighter and healthier. This is how we served it at our Greek restaurant and how I serve it at home for my family. I know at first it may seem intimidating, but I promise it is much easier than you think. The best way to cook Calamari is not to fried it . The best way is to Grill it 👍 grilled calamari is the prefferred way to cook it if you like awesome taste and healthy at the same time. Kalamari is a very popular seafood that is served all over Greece. It is either fried or grilled and it is always served with fresh lemon, never marinara. Grilling kalamari seems intimidating but is actually quite simple. Serve it with lots of fresh lemon wedges and a drizzle of ladolemono sauce and it’s a wonderful appetizer for your family and friends. Serves 4 - 6 Ingredients 2 lbs fresh squid cleaned 1 tsp sea salt ½ tsp black pepper 1 tsp paprika ¼ cup extra virgin olive oil Lemon wedges for serving Ladolemono Sauce ¾ cup olive oil ¼ cup lemon juice 1 teaspoon sea salt 1 teaspoon black pepper 1 tablespoon dried oregano Place your squid in a mixing bowl. Whisk the salt, pepper, paprika and olive oil together in a small bowl and pour over the squid, turning the squid over so it is completely coated. Cover the bowl and allow the squid to marinate for at least 30 minutes or up to overnight. Remove the squid from the refrigerator about 30 minutes before you want to cook it. Bring a charcoal grill or gas grill to high heat. Use tongs to place the kalamari on the grill and cook about 4-6 minutes per side, until completely cooked through. Remove the kalamari to a cutting board. Cut the kalamari into rings about ½-inch wide to place on a serving platter. Make the ladolemono sauce by whisking together the olive oil, lemon juice, salt, pepper, and oregano, drizzle it over the freshly grilled calamari and serve with fresh lemon wedges.

How to make Simple and Easy Calamari Roast | Spicy Squid Roast Recipe | Calamari Roast for Bachelors | Squid Fish Recipe When you hear of Spicy Squid Roast, the aromas awakens your senses which in turn fires the appetite and it is hard for the taste buds to resist the temptation of this spice-rich preparation. Several fresh spices are used that gives a unique aroma and flavor to this preparation and not only it’s hearty but it’s healthy too. It is low in calories and is a good food source of zinc and manganese, contains no saturated fat and is high in natural protein and only takes minutes to prepare. So here’s the recipe from my kitchen to yours Happy Cooking ! Ingredients : 500 gms Squid (cleaned & cut into rings) 1 tsp Ginger Garlic Paste ¼ tsp Turmeric Powder ½ tsp Kashmiri Red Chilli Powder Salt as per taste 2 sprigs Curry Leaves ½ glass Water 2 to 3 tbsp Coconut Oil 1 tsp Ginger Garlic Paste 3 Green Chillies slit 2 large Onions (sliced) 2 sprigs Curry Leaves 1 tsp Fennel Seeds (coarsely ground) Salt as per taste 1 medium size Tomato (chopped) ¼ tsp Turmeric Powder 1 tsp Kashmiri Red Chilli Powder 1 tsp Coriander Powder ½ tsp Garam Masala Powder 1 tsp Pepper Powder 2 sprigs Curry Leaves Note : tsp is teaspoon tbsp is tablespoon Please Note : Squid must be cooked for either a very short time i.e 2 to 3 minutes (hot & fast) or a very long time i.e 30 to 45 minutes (low & slow). Anything in between turns it very rubbery. Since I was not satisfied mentally by cooking the squid only for 2 to 3 minutes and nor did I have the patience to wait for 30 to 45 minutes, so to save time, I pressure cooked the squid and to my surprise it did not turn rubbery! Since then I have been doing this process. If you find it's still rubbery then, pressure cook for 1 whistle on high flame. Lower the flame and cook for 5 to 7 minutes. INSTRUCTIONS : To clean the calamari: Detach the head from the "hat". Pull carefully, as most of the innards that are attached to the head will come out when you pull. Under running water, pull the skin off the little hat and run water inside it to get out anything else that might still be stuck in there. While you are cleaning, you might feel a stiff, plastic-like cartilage quill. The end will be sticking out at the open edge of the hat where there is a little point. Just tug on it gently and pull it out. Set the little hat aside, it is clean! Next, separate the tentacles from the eyes - keep the tentacles and throw the rest away. Grab the tentacles and feel in the middle for the little beak. You can just pop it by squeezing the sides gently, or by pushing it from behind. Then, just slice the little hat into strips.
